The classic Danish cheese sandwich is extravagent to say the least. This one, from the restaurant Peter Liep, represents the extreme amount of cheese that is needed. In fact, we couldn’t even see the bread when it was served.
Recipe Ingredients
- 1 slice Rye bread
- butter
- Leaf of lettuce
- Enough cheese to cover the bread, with an inch or two on every side. Traditional Danish smørrebrød would use strong cheese, which means it has been stored for several months and has a…pronounced odor.
- 1 slice Aspic
- Onion rings
- Two radishes (Served on the side here with salt, but could also be sliced and placed on top)
- Salt for the radishes
Assembly
Butter the bread (Traditionally, duck’s fat would be used in place of the butter). Assemble in the following order: lettuce, layers of cheese, onion rings and aspic. Serve with radishes and salt.
