Perfect for those chicken leftovers in your fridge, and a great sandwich for the outdoors. This specimen was consumed on a sailing trip to Flakfortet (see also “The Flakfortet” potato sandwich). It is a spinach roll, with smoked cream cheese, roasted chicken from the night before, fresh heirloom tomatoes. and mini-cucumber slices. Sprinkle generously with dukkah and olives on the side, of course.
Sandwich Recipe
- Spinach roll
- 1 tomato (we used a Black Krim for this sandwich)
- ~ 6 slices of a hot house or other seedless cucumber.
- Smoked cream cheese (enough to cover the bread as shown below)
- Roasted chicken, 3-4 strips.
- Dukkah
- Olives
Cut the spinach roll in half, and spread the cream cheese on one half. Top that with slices of cucumber, and sprinkled with dukkah. The other half is covered with slices of tomato, chicken, and also sprinkled with Dukkah. Now, take a deep breath and slap them together. Garnish with olives.
