Roasted tomato pesto, an excellent smear for sandwiches.
Roasted Tomato Pesto Recipe
- 1 cup roasted tomato
- 1/4 cup sundried tomatoes
- 1/2 cup olive oil
- 1 cup basil leaves
- 2 cloves garlic
- salt and pepper to taste
Place all the ingredients in the bowl of a food processor. Grind for about two minutes. Actual timing depends on the speed of your motor. I have a fairly powerful one. Still I like to see little green pieces of basil throughout so I try not to grind it to oblivion. Your roasted tomato pesto is now ready for use in a plethora of dishes.
