You may think this is an odd looking giant patty, and you would be right. But there is a reason of course; the patty is stuffed with feta cheese. So take a step back and say “woooa”, then re-evaluate your first impression. Quite frankly, we forgot to take a photo with a cross-cut, so someday we’re going to have to make this again. Until that happens you can always try it yourself, it’s gooood.
Sandwich Recipe
- 1 slice of garlic ciabatta bread
- 2 slices of Dubliner cheese
- 1 beef patty stuffed with feta cheese
- 3 leafs of spinach, since it’s important to eat your greens
- 2 tbs red bell pepper
- 1/4 slices of avocado
Make the beef patty first, following the recipe below. Lay the Dubliner cheese on the ciabatta bread and toast in the oven until the bread is golden and the cheese melted. Remove, and add the spinach and beef patty.
Cut two slices of avocado and precariously balance on top. Try to create a bowl-shape to hold the red bell peppers and prevent them from falling off.
Cut the red bell pepper into little pieces and place inside the avocado.

Feta Beef Patties
Makes 3-5 patties depending on size.
- 1 pound lean ground beef
- 1 medium onion, grated
- 3 minced cloves of garlic
- 1 1/2 cup of finely chopped parsley
- 2 oz feta cheese
- 1 egg
- 1/4 tsp salt, pepper to taste
Mix all ingredients, and shape into burgers. Don’t make them too thick since you need one patty + feta + one patty to create one giant feta patty.
Grill for 8-12 minutes on high until they are cooked all the way through and have grill marks. Feta cheese doesn’t melt much, which makes it perfect for patties and easier to work with.
Note: We add the egg to make sure the patty doesn’t fall apart. Eggs make them stick better.
