We love to roast tomatoes for all kind of sauces and soups, and with our garden currently full of tomatoes, life is good. After roasting they look amazing (see photos), so we thought we would try and make a simple sandwich to show of the colors and tastes of a freshly roasted tomato fresh out of the oven.
Sandwich Recipe
- 1 slice of baguette
- 1 half roasted tomato
- 2 tbs chili hummus
- 1/4 avocado
- a pinch of cumin salt
First prepare a batch of roasted tomato following this recipe. Use big tomatoes and slice them in half before spreading the ingredients on top.
Slice a baguette in half and spread hummus on both halves. You can use your favorite hummus, but here we used a spicy cilantro version we make. Cut the avocado in sliced and place on the sandwich. When the roasted tomato has cooled a little, place in on top, and the sandwich is ready.
Note: Cumin salt is 50%salt, and 50% cumin powder, grinded in a grinder. Great topping!
