Continuing our tradition of declaring pizzas ‘a kind of sandwich,’ we present this shrimp pizza with pesto sauce and smoked paprika. Like the pizzas that went before it, it descends from our 15 week pizz-off Friday end-of-week celebration stint. We’ve come to love these Fridays, and hope to start anew soon albeit with a different theme (Yet to be determined, maybe tapas?).
Recipe
- Pizza Dough
- 1 1/2 cup of fresh pesto
- 30 cilantro-lime jumbo shrimp (Or any of your favorite shrimp)
- 1 cup shredded Parmesan
- 4 slices of mozzarella cheese
- 4 tsp smoked paprika
Make or buy the pizza dough. Roll it out to about 1/5th of an inch thickness. Spread the pesto evenly all over, and lay out the shrimp. Drizzle the shredded Parmesan cheese evenly on top and place the mozzarella cheese in all four corners so it can melt and spread out. Sprinkle the smoked paprika all over the pizza. Bake in the middle of a pre-heated oven at 400 degrees (preferably on a pre-heated oven stone) for about 12-15 minutes until the cheese has melted and the pizza is golden brown.
This sounds delicious! Many of my favorite ingredients in pizza form-can’t go wrong with that.
