Recipe
- 2 slices of bread
- 1 tbs olive oil
- 1 plantain
- 4 slices of cheese (We used petite basque)
- 2 tbs regular yogurt
- 1 tsp lemon juice
- 1 tbs chopped cilantro
Heat a frying pan to medium heat. Cut the plantain into long slices, and fry them in the oil until they are golden brown (As seen on the photos). Place them on a paper towel to allow it to soak up the excessive heat. Do not leave them there for more than a minute, or they might stick to the towel.
Slice your favorite cheese and cover one slice of bread with it. Place fried slices of plantain on top.
Close the sandwich and fry it in your panini grill until the bread is golden brown.
While it’s frying, mix the yogurt with the lemon juice. Chop the cilantro and add it to the yogurt.
When the panini is ready, remove it and open it up. Splash the mix on top of the plantain, and close the sandwich back up. Enjoy while warm.
