Hungry for a snack, I found some cilantro lime shrimp from Costco in the fridge, along with a bit of smoked salmon. In about 1 minute I had created this little post-lunch cracker, which would also work great as an appetizer for a party. The cracker used here is a water cracker, but I think I would prefer something a little more rustic next time.
Sandwich Recipe
- Water cracker, or any cracker you have. Rustic with sesame seeds would work excellently.
- Remoulade or tartar sauce
- Smoked salmon
- Gravlaxsås, which is Swedish for “mustard sauce for salmon“.
Tip: You can get the original at most Ikea’s.
Note: Substitute a light mustard instead, it will do just fine. - 2 large shrimps
Since water crackers are extremely dry, I made sure to add a lot of sauces to this one. Start out with a teaspoon of remoulade right on the cracker. Add a piece of smoked salmon on top, then another teaspoon of “gravlaxsås”. Top it off with two large shrimps.
If you’ve tried this, you can tell it takes about 30 seconds to top one cracker, so if you ever need a quick appetizer for a party, you can easily create a tray of these in 10 minutes.
If you don’t have the prepared flavored shrimps, I would sprinkle generous amounts of lemon on top of the cracker to give it a little zest.
These shrimp (and crackers) were scrumptiously delicious, and next time I see the shrimp at Costco I’m definitely getting more.
