We do love smoked salmon in our house, and it makes for great appetizers or snacks. Salmon is also fairly easy to combine with other ingredients, as long as you keep the taste influences light so as not to overpower the subtle fish taste. It works particularly well on fresh bread, or lightly toasted older revived bread.
Appetizer Recipe
- 1 slice of baguette
- 1 tsp pesto
- 1/4 oz smoked salmon (enough to cover the appetizer)
- 2 basil leaves
- 1/2 grape tomato
Assembly is simple: Slice the baguette, spread the pesto, add basil leaves, smoked salmon and the half grape tomato on top. Enjoy.
Tip: To revive old dry bread, you can often moist it by dripping water on it (don’t make it soggy though). When we’re in a hurry, we literally run the tap and as quickly as we can pass the bread under it in a ‘swoosh’ like motion. Then toast it. After toasting it will be fresh and crunchy again.
