Review: ‘Luxus Bagel’ at the Bagels Corner In Copenhagen, Denmark

There are some thinks that don’t translate so well across cultures. Bagels might be one of them. It was a dreary afternoon in Copenhagen, Denmark, when I walked into the Bagels Corner. A bit hungry I could not get myself to settle for a plain cream cheese bagel, so instead I opted for the luxury bagel (Choice of smoked salmon, shrimp, pesto chicken, Mexican chicken, etc). I decided on pesto chicken, and selected a whole-wheat bagel with rolled oats on top. Looked great. Then the lady asked me for what type of cream cheese I wanted. Cream cheese? Whaaaat? I decided to see where this would go, so I picked the herb-cream cheese. She added a generous layer. Then the pesto chicken (lots of it), then lettuce, cucumber, corn, and finally she asked me to pick a dressing. I selected the curry dressing. Again she added a generous layer on top, and closed up the bagel. Oh dear!

Pastrami Sandwich With Melted Mascarpone/Valdeon Cheese Melt

We’ve found lately that mascarpone cheese is excellent for making all sorts of delicious mixes. Mascarpone pesto for example we used on a turkey sandwich a few weeks ago. This time we are taking it a notch up, and are making a mascarpone melt with Spanish valdeon cheese and black sesame seeds plus roasted garlic. We use this as a spread for the bread and a topping for the pastrami after melting it in the microwave. Great food !

Liver Pate Sandwich with Onion and Garlic Spread on Sesame Bagel

Sometimes a simple sandwich is the best; this one has Maria’s liver pâté, onion, creamy garlic paste and a little onion. A perfect combo, so despite an urge add more, we stuck to ‘simple’. After being sick with the cold for 5 days, this was also pretty much what we could handle, as we were both exhausted. It’s nice to recover with a great sandwich, and we hope to get back to creating some great new ones this upcoming weekend. Thanksgiving is also approaching, so if anyone has great turkey sandwiches, let us know and we just might give them a try!

The Ultimate Chicken Bagel Sandwich with Mozzarella, Sliced Pear, Grilled Yellow Bell Pepper, Onion Rings, Tomato and Caesar Dressing

Few leftovers are as versatile as chicken – the possibilities are (nearly)endless, and if the chicken is at least moderately good, with the right toppings and other accompaniments, you can have as splendid enviable meal in less than 10 minutes.  After a long day at work, what’s not to love?  Don’t get us wrong, this sandwich is even better if you cook a chicken just for this purpose and make the sandwich the same day, but seriously, who does that? Why a bagel you might ask? Well bagels make for pretty darn good sandwiches. That and the fact that since we buy our bagels at Costco,, we are forced to find innovative ways to use them before they develop freezer burn:-).  They defrost in 30 seconds in a microwave. Cut them while still very cold (but not frozen), and proceed directly to the sandwich making. The result, like here, is a perfectly toasted bagel that is neither to hard or soft, but just perfect after toasting.

The Ultimate Seared Salmon Sandwich on a Sesame Bagel with Roasted Garlic, Roasted Vegetables, Shredded Primadonna Cheese and Pear

We eat a lot of salmon in our house; smoked salmon, grilled salmon, and last night seared salmon. So we had to try and see if we could turn some of the leftovers into a delicious second-day sandwich (It’s what we do after all). In this case, we have a piece of seared salmon with black sesame seeds, fennel seeds, and spices. Since salmon is ‘light’, we decided to add a few grilled vegetables, a bit of cheese, and some thinly sliced pear. Of course, we used roasted garlic as a smear. This combination does hide the salmon taste a bit, but it brings out all the lovely nuances of the grilled veggies, and we were very pleased with the final outcome. Double Cheese Meatball Sandwich on Sesame Bagel, with Black Bean Chili Sauce, Olive Oil, Mozzarella and Pecorino Romano Cheeses

Somewhere out there, people are making meatballs with no meat, which seems oddly disturbing to me. At least call them something else :-). This sandwich, however, has genuine meaty meatballs (danish Frikadeller), plus no less than two cheeses, and a bit of the brilliantly hot Chinese black bean chili sauce which we have found really useful for sandwiches when used modestly.

Bagel Sandwich with Mashed Potatoes, Mayonnaise and Chili-Lime Shrimp

These shrimp are very versatile on sandwiches. They are chili-lime shrimp from Costco, pre-cooked, and they are very moist and succulent. To really try and savor their taste, we created this sandwich which combines them with mashed potatoes, lime, and a toasted bagel. The bagel gives the inevitable ‘crunch’, while the shrimps can triumph over the subtle taste from the mashed potatoes. A few sprouts just makes it look good. Of course, Anders can’t leave well enough alone, and sprinkled the whole thing with sweet curry. So much for subtlety.

Tuna Salad Sandwich on Toasted Bagel with Cucumber, Tomato, Green Onion and Sprinkled with Sweet Curry

Our tuna salad sandwich saga continues with this fresh summer construction. A toasted bagel (one of those with everything on it), combined with fresh crunchy cucumber slices, tasty grape tomatoes, and green onions, sprinkled with a tsp of sweet curry. When you eat this, the smell of the curry adds to the experience before you even take a bite.

As you can see on the pictures, two sprouts from another sandwich somehow found themselves on this one. When we noticed, the pictures were taken, and the sandwich eaten, so please disregard the misplaced sprouts. They are harmless.
