Mashed Potato Sandwich on Ciabatta with Ham, Fried Onions, Pickles, Flax Seeds and Dukkah

For some, if not most, the concept of having a mashed potato sandwich may seem disturbing. However, if you find yourself wondering whether you are loosing your mind, you probably have never tasted one. They are delicious! So overcome your inhibitions, and make a mashed potato sandwich next time you have a little leftover. For this one I felt like adding flax seeds and ham. Since I want the ‘crunch’, I toasted half a ciabatta roll, and added fried onions on top for good measure. For a little hint of sourness, sweet dill pickles always does the trick, and a sprinkled of my newfound love, Dukkah, seals the deal.

Spicy Toasted Ham & Cheese Sandwich with Fennel Seeds and Salami

When you need to awake from the schlump that is Thursday night after work, a spicy kick to your system can be just what you need. This sandwich does just that. With a strong danish cumin cheese, sweet (but hot) chili sauce, and a strong organic and local salami from Poway Farmer’s market, this one will wake you up. Just for kicks, I added one tsp of fennel seeds on the bread and cheese while in the toaster oven. It added a very nice flavor that went really well with the cheese and ham.

Spicy Spare Rib Sandwich with Mushrooms and Roasted Garlic

I have to admit I was looking forward to this beauty before we even started making the smoked spareribs. In fact, while we passed the Costco food isle, I saw this great spare ribs sale and I couldn’t help thinking of what a fantastic sandwich I could make with the leftovers. So, a couple of days later, after feasting on the ribs I finally got around to making this. I wanted to really bring out the flavor of the pork, while adding some classic ‘steak’ flavors on top. So, sautéed mushrooms and sweet chili sauce plus of course a few onion rings for the crunch factor.

Roast Beef Sandwich with Scrambled Eggs and Tomato Relish

Admittingly, I never envisioned adding scrambled eggs to roast beef.  It just seems wrong, but scrambled eggs were being made for dinner and so I thought, “Why not”.   You can call this the serendipitous sandwich because lo and behold, it actually turned out quite tasty.  For a little extra crunch, I added onions (both fried and raw, sliced).   Another serendipitous discovery was just how good tomato relish was on this – it went suprisingly well with the eggs and roast beef.

Mesquite Wood Smoked Turkey Cheese Sandwich

This is one of my favorite lunch items in downtown San Diego. It is served, surprisingly, at Ralphs, and is not only a great sandwich, but also very affordable at just $5.99.  I particularly enjoy the mesquite wood smoked turkey sandwich on nine grain & seed bread  (Toasted), with cajun and horseradish mayo. I usually get all the veggies, lettuce, green pepper, onion, tomato, sweet pickles, olives, etc, and in this case swiss cheese.

While I can’t claim to be the chef, this sandwich was designed by me, so I think I can claim the recipe at least 🙂

Roast Beef Sandwich with Horseradish, Sweet Dill Pickles and Sun-Dried Tomatoes

Another variation of the roast beef sandwich, this one has a lot more bite with the added mustard and horseradish sauce.

Roast Beef Sandwich with Capers, Sweet Dill Pickles and Fried Onions

The roast beef sandwich is yet another classic piece of smørrebrød. Generous layers of roast beef are stacked with remoulade, capers, sweet dill pickles, fried onions, salt and pepper. It comes with a variety of options, such as different smears (duck fat, butter, roasted garlic or mustard like this one). Typically it also has a nice little dash of shredded horseraddish, but I couldn’t find any on the day I made this.

“The Veterinarians Midnight Snack” – Dyrlægens Natmad

“Dyrlægens natmad” as it is called in Denmark is an old sandwich like your mom used to make them. In English, it’s translated as “The veterenarians midnight snack”. It consists of liver pate on rye bread, topped with corned beef (or other salted meat), aspic, and onion rings. In this version, we start our assembly by adding lettuce at the base.

Spanish Omelette Sandwich

While this is really more of an omelette than a sandwich, it still has the basic makings of a classic. The Spanish omelette includes fried potatoes, onions and eggs, and is prepared in a pan in the oven. Topped with tomato sauce, fresh greens and air-dried Spanish ham, it is absolutely delicious by itself. However, put it on bread, and you have a sandwich from heaven (or Spain).
