One of our crazy experiments finally paid off. The addition of the salad dressing to this bread takes this simple sandwich to a whole new level. The bread, after toasting, is moist but yet crunchy. The dressing adds a ‘zing‘ to the ham. This sandwich reminds us of Woodstock: a mixed bag of nuts making sweet music together. Feel the love, add the dressing!

- 5 roasted garlic
- 3 tsp mustard
- 4 tbs mayo

Chicken Salad Recipe
- 4 roasted garlic
- 3 tbs Mayo
- 1 tsp fennel seeds (anis)
- 1/4 grated onion
- 1 tsp smoked paprika
- 1 grated garlic
- 1/2 tsp pepper
- 1/2 tsp Salt
- 2 tsp Tarragon Mustard
- 5 oz chicken pieces (picked from roasted chicken)
Mash the roasted garlic to a pulp with a fork, then mix all the ingredients in a bowl. Rejoyce, you are done!

Falafel On Ciabatta Bread Sandwich With Roasted Garlic, Chili Sauce and Italian Salsa Verde
There are so many ways one can use falafel to make sandwiches besides the traditional pita bread. Here we have combined it with Italian ciabatta bread because we love that, hot chili sauce because it’s traditional for at least the European Pita style, roasted garlic because it complements the falafel well and Italian Salsa Verde because it brings any food a little closer to food-nirvana (No seriously, add some to your next pizza, sandwich, paste, rice or potatoes and see for yourself). The salsa verde is very close to pesto, bu is a lot more lemony which adds a great flavor.
Sandwich Recipe: “The Grey Lady” – Truffle Pâté On Dark Rye Bread With Ducks Fat, Roasted Garlic And Topped With Onions and Olive Oil
The most common sandwich in Denmark is probably the liver pâté Sandwich. Every school kid knows it, and often hates it due to the sometimes bare-bones minimum effort put into making it. This sandwich here we call “The Grey Lady”, and it’s a play on the traditional liver pâté ‘blah’ version – A serious upgrade if you will. It is not the most attractive sandwich, but it taste awesome. One last upgrade we could still add is using goose liver pate, but we couldn’t find any locally so that will have to wait.
Steak Sandwich with Blue Cheese, Roasted Garlic Mayonnaise and Balsamic Vinegar Reduction
About two weeks ago I promised Anders that I would make him the perfect steak sandwich. His raised disbelieving eyebrows might have been because I am frankly not a fan of beef. I mean, I don’t get it – what is the fascination? Still, a promise is a promise so I determined that this would be the day.
I left work with the plan in mind: rush to Trader Joe’s to buy ciabatta bread, watercress and the requisite rib-eye steak and get home and get down to business. Alas, the steaks at Trader Joes were disappointingly thin – a setback that resulted in a trip to two more supermarkets before I found the perfect steak. Two hours later, I finally made it home, tired and with some of the wind gone from my sail. Still, the look on Anders’ face when he bit into this sandwich made the evenings’ frustrations well worth it.

Living in San Diego means being influenced by Mexican cooking. Each street corner seems to sport a Mexican fast-food joint. Our cooking regularly employs cilantro and salsa, bothView Post of which can be tasty new ingredients to familiar meals. In this sandwich, we use both, and with the French bread, this becomes an international affair. Danish meatballs (frikadeller), Italian mozzarella, cilantro and salsa, made by a Dane and a Jamaican living in the US. It is a small world these days.

A Kafta (or Kofta or kūfta, is Persian in origin. کوفتن (Kuftan) means “to beat” or “to grind”, according to WikiPedia. One could say that a Kafta patty is like a spicy meatball. In any case, it’s delicious, and since we recently made some, a wonderful Kafta Burger (ok, maybe more of a sandwich, given the bread) is in order. We made our own version of the traditional yogurt dressing, because we can. We love this Middle Eastern food so in the future expect to see more recipes like this. We think Middle Eastern food should be a food group!
The Ultimate Seared Salmon Sandwich on a Sesame Bagel with Roasted Garlic, Roasted Vegetables, Shredded Primadonna Cheese and Pear
We eat a lot of salmon in our house; smoked salmon, grilled salmon, and last night seared salmon. So we had to try and see if we could turn some of the leftovers into a delicious second-day sandwich (It’s what we do after all). In this case, we have a piece of seared salmon with black sesame seeds, fennel seeds, and spices. Since salmon is ‘light’, we decided to add a few grilled vegetables, a bit of cheese, and some thinly sliced pear. Of course, we used roasted garlic as a smear. This combination does hide the salmon taste a bit, but it brings out all the lovely nuances of the grilled veggies, and we were very pleased with the final outcome. Lavash Cracker Appetizer with Olive Tapenade, Grilled Squash and Roasted Garlic
We love lavash crackers, and I mean really love them, and we’ll typically eat them just plain. Sometimes though, it’s good to add a little extra, and since we were grilling vegetables yesterday, we thought this little appetizer would be a great way to use the lavash. In this case we didn’t score the lavash before baking so instead we broke it into large rustic pieces. That’s another great way of presenting them, and of course with bigger pieces comes the opportunity to layer other ingredients on top.
